The success or failure of most hotels lies in the management of the kitchen and store room departments, and the profit as a rule is lost through waste.
Your future compensation, after you were tested, would depend entirely on the showing you made, and the executive ability developed by you in control of your men.
If you are inclined to undertake the matter under these conditions, write me, and I will acquaint the Chef with your intention, and bring you down here some time in March, so you can take complete charge on the 1st of April. Your salary, of course, would begin when you got here.
