Dear Sir:-
My assistant manager, Mr Cook, has resigned, to take effect April 1st or earlier if I can relieve him. This I think will cause Mr Compagnon to agree to stay in case I wish it, but I am willing to carry out the arrangement mentioned to you in my letter, if it can be done in a way that is satisfactory to Mr Compagnon. My only reason for writing you to offer the position is, that Mr Cook has advised me that during Mr Compagnon's sickness for a week the kitchen went along in apparently as good a shape as while Mr Compagnon was there. My object in writing you is to engage your services on trial, and give you charge of the kitchen at a time when we have no rush of business and the busy season is over, to test the matter. Would not be willing to make a permanent contract with you until the question had been decided by actual test.
It is my desire to carry out and continue some reforms which Mr cook has inaugurated in the kitchen department, the principal one of which relates to the furnishing of wine to the cooks. for...
