Don't you think the services are too large that is larger than necessary? In some cases two slices of beef are brought out, two large chops, etc. I mention this because I have heard guests speak of our services comparing it with what they have found at European hotels.
If you have not examined Jan. earnings wish you would. When we have the inventory taken and the Jan. and Feb. earnings compared with last year for the corresponding time, can then come to conclusion as to final results.

The soup sticks put on the table are partly brittle and partly soft, which rather indicates that some are kept over a day. Whenever you do keep them over put them in the oven and make them brittle.
