Dear Sir: - I have your favor of the [unknown] inst. Have also talked with Mr Lansing. He was not certain that your experience in the pastry line is sufficient to satisfy us, as we did not know just how much we would want during the winter. I am willing to do this. Pay you what we are now paying our baker, $ 60.00 per month. Try you on pastry work. If you handle the pastry department satisfactorily, give you $75.00 per month, and allow you $60.00 per month for a baker, then necessary.

You must not forget that we have a large retinue of servants seldom running under 100.

Telegraph me, if you are coming. If you do come, it must not be known that you are taking charge of the pastry department, until you have been here long enough to test it, as I do not want to be left by the present pastryman before the last of the month.
