I noticed night before last that the cranberry sauce still had skins of the cranberries in it. One of the best compliments I ever heard about the house, this Winter, was by a gentleman who did not know who I was, speaking of the completeness and thoroughness of the table, particularly mentioning the cranberry sauce, saying he never saw anything like it in any other hotel. I remembered that the sauce on the day he referred to was thick enough to be cut with a knife, and that all the skins were out. If it is not too expensive think it would be well to have it made that way all the time.
