Mr. E. C. Dyer,

Our bills of fare particularly for dinner, are two long, much longer than they were when we opened the house.
I wish you would ascertain as much as you can the number of courses that we use, and the number of dishes in each course during the first year, if you can do so from any of our employees; and gradually drop back to that basis. Our Bill of Fare were frequently commented upon for their fewness of dishes and the regular change made each day.
