Dear Sir:-
Mr George Warren has recommended you for the position of Chef of our hotel. Says he has had several conversations with you on the subject, and that you are the man, if we conclude all engagement with you, that will keep the expenses of the kitchen department down to the lowest possible notch, and at the same time keep up the standard of the table.
He was not certain when he first wrote me that you would be able to accept such an engagement, and I learned from him on the 28th of March that you expected someone at San Francisco on April 10th who would probably leave you in a position where you could enter into an engagement.
Our Chef resigned to take effect April 1st. He is still living on the Beach, and will probably be here for two or three weeks longer, so that if we need him he will help us out. I have temporarily advanced one of his assistants and engaged him for a month, not knowing that you could be secured. At what salary w you be willing to come and take charge, say on May 1st?
