Dear Sir:-
Your favor of the 1st inst., is received, and its contents noted.
We shall make a change in Chef about the first of April, and would like to know at what salary you would be willing to come, and have you send me any letters of recommendation you may have.
,As our busy season will be over about that time, I do not feel like paying an extravagant salary, want a chef that will agree to follow out my general policy in the management of the kitchen. I mean by this that if I do not think it is best to furnish liquors to the cooks for drinking purposes that the Chef will work with me to that end. We never dictate as to whom he shall employ, but would want an understanding on such points as the one mentioned, so as to avoid any difference arising later.
