Gentlemen: - In reference to your invoices of Aug. 1st and Sept. 19th. Mr Zander who is now in San Francisco can tell you the amount of waste there was on the loin shipped July 29th. Our best recollection is that there was 22 lbs. we could not use.

In reference to the shipment of Sept. 16th, I have already written you. Our steward tells me that after trimming the meat down to the same size we have been buying from our butchers, here, and which Mr Zander told me he explained thoroughly to your man, there was trimmed off loins, 120 lbs; ribs, 90 lbs; racks of mutton 90 lbs. In addition to that there was additional trimming on account of coming in poor condition, some of it being stuck with large hook holes, from the loins 50 lbs., from the veal 50 lbs., and chuck 80 lbs. The first deduction on account of trimming being $37.45. Second deduction on account of spoiled meat, $13.25 total $50.70. If 22 lbs was the amount taken off the invoice of July 29th, $2.64 should be added.

I think Mr Zander is in San Francisco now. Shall we remit the balance due based on the above statement? If you wish further evidence in the shape of affidavits of the steward and butcher, we will be pleased to [unknown] same. It was unfortunate that you did not...
