Dear Sir: I have your favor of the 17th inst. We have two large bake ovens, one to be used by the pastryman and one by the baker when the house runs full. Each department has a room 30 X 50 ft, immediately under the kitchen, with one dozen large open windows to the outside. The quarters are very cool and pleasant. We use anthracite coal with which to heat the ovens. In addition to the main ovens, in the pastry room is a small oven.

What I desire to do is, to make an arrangement with a thoroughly competent, sober man to take charge of our pastry and bread baking. I want to know the wages of such a man, with one assistant, when the house is running from 150 guests down, to attend to the bread and pastry work. When the guests number more than 150, which is usual from Dec. 1st until May, want him to get a good baker to assist. During the month of Feb. our hotel runs as high as 500 and 600 guests. Also during March and first half of April the number is about the same, 500 and 600. If three men, as named, could not run the work when the house is running full, should be willing to have another assistant at low wages, to help the baker.

What I desire is, to have you telegraph me the price at which you will come the position to be permanent the year round, the first offer to be a figure that will cover yourself and a low priced assistant; second, wire me the wages you will want for yourself, baker and a low priced assistant, and, third, wages for yourself, baker and two assistants.

I intend to make the change very soon. The house now is running at only 70 people, but the number of guests will begin to increase about the middle of next month, as the present is the dullest time of the year.
