Mr E. C. Dyer,
In the issue certificates that were turned in to Miss Ingle today, I notice the use of wine is growing very rapidly. I had quite a severe tussle with the former chef, and it was only after months of repeated hard work, I reduced the wine bill to one tenth of what it was when I started to check upon it, and we still kept the bill of fare up as high as it was before. The cooks drink it themselves though they claim they use it in soups. You ought to be on your guard about ordering trouffles and fancy things, as the chef may [unknown] before you will be aware of it the cost per capita will be very much larger than it has been or should be; I simply mention this so that your attention will be directed to them.
