Mr E. C. Dyer,
I forgot to look into the method of baking potatoes. Look well to the ice for the dining room, there is dirt on it [unknown]. Keep track of the German biscuit, horse-shoes and Vienna bread that is made in the morning, and see that it is kept dry and away from steam, in the evening they become soggy. Make it a rule to put on at lunch any horse-shoes or German biscuit left from breakfast, until the waiters can determine whether the guests like them; they are used exclusively at the Palace Hotel for lunch cold, and preferred to bread.
