I want you to keep a careful record, or have your assistant while you are gone [unknown] of every thing extra ordered for Capt Barber's table, particularly do I want to know how many breakfasts are ordered at a certain time and not used, and how many fresh ones ordered. And I also want to know how many special Steaks are used and so forth. [unknown]
