Chef,
The flies in the kitchen are getting to be a nuisance and coming into the dining room; I am going to put in the screens into the windows and doors, of as large a mesh as possible that will keep the flies out, when this is done please see that the [unknown] doors are always kept shut.
I want no more night work done on the pipes in the kitchen, and I want the steam turned off ever day at two oclock, and any other hours that you can turn it off and save fuel. Of course when we have a crowd [unknown] late lunch it must at times be kept on a little longer than two oclock. It costs us more fuel to keep the steam hot in the great length of pipes to run the kitchen than it does to run our electric lights and we must try to economise on it more if possible and I know you will do all you can in this matter.
